Every month, we will be working with the amazing Chef Maria Sparks (Cork and Platter Catering and Gro Cafe). In her lifetime, Maria Sparks has been fortunate enough to live in a variety of countries. Through her extensive travels, she’s learned that quality of life is enhanced by supporting local purveyors and community driven organizations. These practices also help Maria to educate and encourage a sustainable lifestyle to her clientele.
She also had the opportunity to work with people who raised her awareness for quality ingredients and integral culinary methods. Jeffrey Strauss from the Pamplemousse Grille, taught her “attention to detail” on so many levels. In addition, she has worked alongside Mark Burnett (creator of Survivor, The Apprentice, Are You Smarter than a Fifth Grader?) on the Discovery Channel’s Eco-challenge as the principle event chef and coordinator, and at Fox Studios as set designer/food stylist on the set of the sitcom Kitchen Confidential depicting renown chef Anthony Bourdain, she learned how to accept and adapt! Maria is also the talent behind Cork and Platter, a catering, food styling and private chef company. In addition she has recently opened a café within Balboa Park, offering park patrons a healthy eating alternative and a friendly smile!
In my quest to bring healthy farm to fork-friendly food to my patrons in Balboa Park, I’ve come to realize that there are ways to bring the same concept home. In partnering with SuperFood Drive, it’s my pleasure to create fabulous, easy and pocketbook friendly recipes to bring awareness to the mission of offering more super foods for families in need in the fight to end hunger.
